BBQ Recipes That Will Make You Feel Like A Grill Master

You don't need to be a professional chef to whiff up some delicious barbecue recipes on your grill! Even with basic cooking skills, you can make sumptuous meals thanks to reliable outdoor grills and good ol' recipes past down from nan.  Below are some selection of easy but impeccable recipes for an all-time favourite barbecue party!


 

Steak and Potatoes - Forno Boutique

Steak and Potatoes

 

Ingredients: 

  • 113 g. cream cheese, at room temperature
  • 1/4 cup sour cream
  • 170 g. sharp Cheddar, grated (about 1 1/2 cups)
  • 2 scallions, chopped, green and white parts separated
  • 1 tsp. hot sauce
  • Kosher salt and freshly ground pepper
  • Canola or Peanut oil for the grill grates
  • 4 medium russet potatoes, pierced with a fork
  • 1 lb. broccoli, halved lengthwise
  • 1 tbsp. olive oil
  • cowboy steaks (bone-in rib eyes, about 4 pounds total)

Directions:

1. Combine cream cheese, sour cream, cheddar, scallion whites, and hot sauce in a bowl. Season with salt and pepper.
2. Set up grill for direct and indirect cooking and heat to medium. Once hot, clean and lightly oil grates with canola oil. Wrap potatoes with aluminium foil and place over indirect heat or toward the outer ring of the fire. Bake, rotating twice, until tender, 1 hour to 1 hour and 10 minutes.
3. Meanwhile, drizzle broccoli with olive oil. Season with salt and pepper. Grill over direct heat, turning occasionally, until crisp tender, 10 to 12 minutes. Roughly chop.
4. Season steaks with salt and pepper. Grill over direct heat, uncovered and turning once, until browned, 8 to 10 minutes. Transfer to indirect heat and grill, covered and turning once, to desired doneness, 14 to 16 minutes for medium-rare. Let rest 5 minutes and slice.
5. Open foil and split potatoes. Season potatoes with salt and pepper. Top with Cheddar mixture, broccoli, and scallion greens. Serve with sliced steak alongside.

 

 


 

Chicken Kebab - Forno Boutique

Chicken and Onion Kebabs

Ingredients: 

  • 1/2 cup plain yogurt
  • 2 plain yogurt
  • 2 cloves garlic, grated
  • 1 tbsp. grated fresh ginger
  • 1 tsp. garam masala
  • 1 tsp. ground turmeric
  • 2 tsp. lemon zest, plus 2 tablespoons lemon juice
  • Kosher salt and freshly ground black pepper
  • 1 1/2 lb. boneless, skinless chicken breasts, cut into 1 and 1/2-inch pieces
  • Canola or Peanut oil for the grill grates
  • 1 medium-size red onion, cut into 1-inch wedges, then halved crosswise
  • 4 pieces flatbread or naan

Directions:

1. Combine yogurt, garlic, ginger, garam masala, turmeric, lemon zest and juice, and 1/2 teaspoon each salt and pepper in a bowl. Add chicken and stir to combine. Let marinate 15 minutes.
2. Heat grill to medium. Once hot, clean and lightly oil grill grates. Thread chicken and onions onto six large skewers. Grill, turning occasionally, until chicken is cooked through and onion is just tender, 8 to 10 minutes. Grill flatbread until lightly toasted, about 1 minute per side.
3. Serve kebabs and flatbread with Cucumber and Cilantro Yogurt Sauce alongside.

 

 


 

Grilled Brocolli - Forno Boutique

Grilled Broccoli

Ingredients:

  • 900 g broccoli
  • 60 ml extra-virgin olive oil
  • 2 tbsp. Worcestershire sauce
  • 1 tbsp. low-sodium soy sauce
  • 3 tbsp. ketchup
  • 1 tbsp. honey
  • 3 cloves garlic, crushed
  • 1/2 tsp. salt, plus more for sprinkling
  • Freshly ground black pepper
  • 1/4 tsp. crushed chilli flakes, plus more for serving
  • 25 g freshly grated Parmesan
  • Lemon wedges, for serving

 Directions:

1. Preheat grill to medium heat. Trim off fibrous bottom half of broccoli stem, then quarter broccoli head into small trees.
2. In a large bowl, whisk together oil, Worcestershire, soy sauce, ketchup, honey, and garlic. Season with salt, pepper, and chilli flakes. Add in broccoli and toss to coat. Let sit for 10 minutes.
3. Place broccoli on grill and sprinkle lightly with more salt. Grill broccoli until knife-tender and slightly charred, flipping every 2 minutes and basting with any remaining sauce, 8 to 10 minutes.
4. Sprinkle with Parmesan and more chilli flakes, and serve with lemon wedges.
